Ingredients
- 2 cups (500 mL) cherry tomatoes halved
- 1 cup (250 mL) orange bell pepper diced
- 1 cup (250 mL) yellow bell pepper diced
- 3 1/2 oz (100 g) Canadian Mozzarella diced
- 3 1/2 oz (100 g) Canadian Feta diced
- 2 cups (500 mL) canned chickpeas drained
- 2 shallots finely chopped
- 1/4 cup (60 mL) chopped fresh basil
- 1/4 cup (60 mL) lemon juice freshly squeezed
- 2 tbsp (30 mL) olive oil
- Salt and pepper to taste
Preparation
- Place cherry tomatoes, peppers, cheeses, chickpeas, shallots and basil in a salad bowl.
- In another bowl, whisk together lemon juice and olive oil. Mix gently into salad. Season to taste.
